Harvesting our 8 Row Flint corn is always a memorable day on the farm. It's tense and filled with excitement. There are a million variables to consider in the weeks leading up to this day. How much have the deer eaten? How much damage will the blackbirds do? Does it need more time? Probably but maybe not. There always comes a moment when the farmer must make the call and once that call is made they must move forward without doubt. The circumstances are never ideal but any farmer would tell you that if you waited for ideal circumstances you'd never get a single thing done. All of these factors are why this corn is so beloved to us. The emotional and physical toll it takes adds to it's value and maybe even makes it taste better. We use it as cornmeal for cornbread, we add it to our sourdough but its primary purpose is to be made into Polenta. Now a big sigh of relief. Time to eat.
